Fish curry with lemongrass and apple
Ingredients
400g White fish
15g Garlic
60g of chopped onion
15g Ginger
2 Tablespoons curry powder
300ml reduced stock
150ml Coconut milk
30g Lemongrass
4g Kaffir lime leaves
200g Sweet potatoes
100g Spinach
100g Granny Smith apples
8g Coriander
Oil to taste
Fleur de sel to taste

Preparation
Fry the chopped garlic and onion together with the grated ginger in oil. Add the chopped coriander stems and curry powder and leave to simmer for 5 minutes.Add the fish stock, coconut milk, lemongrass and kaffir lime. Add the fish and cook for 30 minutes.
Add the diced sweet potato and diced apple and cook for 15 minutes.
Add the spinach and coriander
Serve with boiled white rice.
