Fish curry with lemongrass and apple
Ingredients
1 lb White fish
1 tablespoon Garlic
60g of chopped onion
1 tablespoon Ginger
2 Tablespoons curry powder
10 oz reduced stock
5 oz Coconut milk
2 tablespoons Lemongrass
1 teaspoon Kaffir lime leaves
1 cup Sweet potatoes
½ cup Spinach
½ cup Granny Smith apples
2 teaspoons Cilantro
Oil to taste
Fleur de sel to taste

Preparation
Fry the chopped garlic and onion together with the grated ginger in oil. Add the chopped cilantro stems and curry powder and leave to simmer for 5 minutes.Add the fish stock, coconut milk, lemongrass, and kaffir lime. Add the fish and cook for 30 minutes.
Add the diced sweet potato and diced apple and cook for 15 minutes.
Add the spinach and cilantro
Serve with boiled white rice.
